- Light soup with baked vegetables
To prepare this dish, you need to take three liters of vegetable broth, one onion, one carrot, one sweet pepper, four potatoes, two tomatoes, bay leaf, ground pepper, salt, vegetable oil. Cooking vegetable soup is quite easy and quick. First of all, cut the carrots and potatoes into cubes. Cut the pepper into strips, and the tomatoes into slices.
Season the prepared vegetables (with the exception of onions) with pepper, salt, add bay leaves and put them in the pan. Then add some water, cover the pan with foil and put in the oven for half an hour at a temperature of about one hundred and eighty degrees. In a separate skillet, fry the onion, cut into thin strips. Add the fried onions to the heated broth. Put the baked vegetables on plates and fill with broth. If you wish, you can add greens to the finished soup.
An irreplaceable dish in Fasting.
- Apple-cabbage salad dressed with orange sauce
To prepare a salad, you need to take one apple, one carrot, a quarter of a small cabbage head, fifty grams. walnuts, black pepper and salt. For the sauce, you need herbs, one orange and two tablespoons of olive oil. The cooking process doesn’t take long.
Shredded cabbage, put in a container, mash well and salt. Grate the carrots, chop the nuts, chop the apple into strips. Combine the prepared ingredients. To prepare the sauce, mix orange juice with olive oil and pour the mixture over the salad. The salad should be infused for about an hour, then add the herbs, and you can serve it to the table.
- Potato casserole with mushrooms
For this dish, we take fresh mushrooms (frozen), spices, onions and a couple of potatoes. Cook the mushrooms, cool and grind them in a food processor (you can use a meat grinder). We also grind peeled potatoes (without pretreatment), mix with chopped onions and mushrooms.
Add spices to the resulting mixture and put everything in a baking dish. Cooking time is about half an hour.
- Lazy stuffed cabbage
Ingredients for cooking: half a kilogram of white cabbage, one glass of rice, two onions, two carrots, two tablespoons of flour, one tablespoon of tomato paste, vegetable oil, salt and pepper. The recipe is not complicated. First you need to boil the rice in salted water.
Chop and mash the cabbage. Chop the onion into small cubes, grate the carrots. Fry onions and carrots in vegetable oil, add tomato paste. Stir the cabbage with sauteed vegetables, flour and rice. Form cabbage rolls from the resulting mass, put on a baking sheet greased with vegetable oil and bake until golden brown. Ready cabbage rolls can be poured with ketchup. - Lenten pies
The recipe for making lean pies is very simple, but the result will surprise you with its mouth-watering appearance and great taste. To prepare the dough, we take water, vegetable oil, flour and salt. Mix half a glass of water with 0.5 cups of butter, add flour until a homogeneous mass of a thick consistency is obtained.
Salt well and knead the dough. For the filling, both potatoes and apples are suitable. Put the filling on the pieces rolled out of the dough and roll the pies. Bake in the oven until golden brown.
- Pear in sweet sauce
To prepare the dessert, you will need four pears, one – two oranges, one teaspoon of starch and a tablespoon of honey. Squeeze the juice out of the orange and bring to a boil, stirring occasionally, add the starch diluted in water. Then remove the juice from the heat and add honey.
Peel and boil the pears until soft in water or bake in the microwave. Put the fruits on a plate, pour over the sauce and sprinkle with powdered sugar.
- Carrot-nut muffins
For baking, take two medium carrots, 200 grams of sugar, one glass of orange juice, half a glass of vegetable oil, a teaspoon of baking soda, one glass of ground nuts, raisins and two glasses of flour. We begin to prepare the muffins by grating the carrots. Next, grind finely grated carrots in a blender with sugar, juice and vegetable oil. Pour the homogeneous mass into a spacious bowl, add nuts, soda (slaked) and raisins.
Mix everything and gradually add flour. The consistency of the dough should be similar to thick sour cream. We heat the oven to 175 °. Grease the cake pan with vegetable oil. We lay out the dough in tins (two-thirds of the volume) and put in the oven for thirty minutes. Cool the finished muffins, sprinkle with powdered sugar on top.
- Mushroom lean cabbage soup
To cook cabbage soup, you need to take fresh mushrooms, onions, carrots, potatoes, sauerkraut, herbs and spices, tomato paste. Cut onion and potatoes into cubes, mushrooms into strips, and grate the carrots. Boil potatoes in boiling water for ten minutes, add browned carrots, onions, fried mushrooms.
Simmer cabbage, adding bay leaf and pepper – peas, until it is soft, add to a saucepan with cabbage soup. Pepper and salt the cabbage soup according to your preference, sprinkle with finely chopped herbs and boil for several minutes, remove from heat and the dish is ready!
- Pea jelly
To prepare jelly, take two glasses of dry peas, five glasses of cold water, fried mushrooms with onions and salt in the amount of two teaspoons. Grind the sorted peas in a blender until you get pea flour. Add salt and fill with water.
Bring to a boil and cook for another forty minutes over low heat, stirring so that it does not burn. Put the finished jelly in a deep dish and cool in the refrigerator, then cut into pieces, decorate with fried mushrooms and onions. The dish turns out to be very satisfying and tasty.
- Cranberry drink
To prepare a drink from cranberries, take one and a half liters of water, half a glass of sugar, one glass of cranberries. We sort out the cranberries, rinse, knead and squeeze through a sieve.
Fill the pomace with cold water, boil, filter and add sugar, juice and cool. Using the same technology, you can prepare a drink from black and red currants.
