  1. High-calorie: smoked meats, cereals, sausages, canned food, mayonnaise and butter;

  3. Low-calorie: fresh vegetables, some fruits and berries, herbs, fish and seafood, yogurt and sour cream.

Of course, it is advisable to use products from the latter group for dietary snacks. However, with a small volume for the New Year, it is permissible to take a variety of ingredients. The main thing is to maintain a balance so that in the end the dietary salad turns out to be low in calories.

Favorite selection of New Year’s salads

For starters, it should be noted that absolutely any dish can be made dietary. For example, it is permissible to cook Olivier not with sausage, but boiled chicken or lean beef, and use sour cream instead of mayonnaise. But Mimosa is best done not with canned food, but with fish, cooked until cooked with spices and spices. At this time, boil the “hard-boiled” quail eggs, then peel and cut into slices. Also finely grate very little hard cheese. Separately combine lemon juice, salt and olive oil in a bowl. Now put seafood, eggs and herbs on the dish. Pour the dressing over the appetizer and sprinkle with grated cheese.

The next option is chicken salad with apple… For cooking you need:

  • chicken breast – 450 g;
  • sweet and sour apples – 120 g;
  • quail eggs – 4 pcs.;
  • lettuce leaves – 4-5 pcs.;
  • salt / lemon juice.

Boil quail eggs in their shells, and then cool in ice water and peel. In parallel, bake a couple of chicken fillets, wrapping them in foil, in the oven at 190 degrees. After 25 minutes, turn off the stove, open the foil, take out the bird, and pour the juice into a glass. Mix the broth with lemon juice and salt. Place in the refrigerator.

Now tear the washed lettuce leaves into a clean bowl. Add there the chicken cut into longitudinal pieces, cubes of sweet and sour apples and halves of quail eggs. Mix everything with a few light movements of two shoulder blades. Drizzle evenly with the juice dressing and broth.

Another dietary New Year’s salad will be prepared beef based and several healthy fresh vegetables at once. Total required:

  • lean beef – 350 g;
  • sweet pepper – 125 g;
  • cherry – 4 pcs.;
  • lettuce leaves – 4 pcs.;
  • fresh cucumber – 110 g;
  • greens – 1/2 bunch;
  • garlic – 1 prong;
  • laurel, water and peppercorns for meat;
  • salt;
  • soy sauce – for dressing;
  • red onion – 90 g.

Put the lean piece of meat in a saucepan, pour in boiling water, add laurel, salt and peppercorns. Cook for at least 40 minutes, after which remove the beef and set aside to cool. Next, remove the husk from the onion, cut the upper part of the pepper, and remove the thin peel from the cucumber with a knife. Then chop the herbs and crush the garlic.

Wipe dry in a large, deep bowl. Inside, in turn, throw pieces of meat, halves of cherry, short slices of pepper, lettuce torn by hand, slices of cucumbers, half rings of onions, garlic and herbs. Mix gently, then pour over the festive beef salad with soy sauce, not forgetting to add salt at the end.

The last appetizer for the New Year’s table is suitable for those who exclude any animal products from the menu. To create such vegetarian holiday salad, you will need:

Salad

  • cauliflower – 150 g;
  • bell pepper – 110 g;
  • Yalta onion – 110 g;
  • lemon juice – 1 tbsp l .;
  • olive oil;
  • champignons – 200 g;
  • baguette – 4 slices.

Disassemble the cauliflower, cutting off the stems, into small inflorescences. Then chop sweet (preferably red) peppers into thin short bars and Yalta onions in half rings. Wash medium-sized mushrooms and cut into wedges. Place a frying pan on the hotplate (non-stick coating). After a minute, without adding oil, add the mushrooms.

Fry for a few minutes until the surface darkens, then add the onions and bell peppers. Introduce cabbage buds immediately. Cover and simmer for another 5-6 minutes, stirring gently from time to time. At the same time, cut off thin slices of baguette, chop into cubes and bake on a dry baking sheet at 190 degrees. At the end, mix the fried vegetables with mushrooms, lemon juice and croutons in a deep bowl.
